Prepare the batter: In a bowl (half an hour before put in the freezer along with the cooking whip) work the flour with water, add the pistachios, sesame seeds and a pinch of salt.
Mix everything and put the batter in the refrigerator until use.
Wash the prawns shell them leaving the final part of the tail and remove the black wire. Dip the prawns in the batter and fry in hot oil.
The oil should not be boiling, must be at a temperature of about 170 °. To check if the oil is ready you drop a drop of batter and if this goes straight back down and immediately the oil is ready.
