Ingredients

- 1 kg of peeled almonds
- 450 g of sugar
- 4 bitter almonds or 4 drops of almond flavoring
- 1 whole egg
- 5 egg whites
- 2 tablespoons of honey
- The grated rind of one lemon
- Candied cherries for decoration

Preparation

Chop the almonds until a flour, add the sugar, then the honey, and finally the whole egg and egg whites, working for a few minutes.
Preheat oven to 220 degrees.
Prepare a baking sheet with baking paper.
Put the mixture into a pastry bag and carry out small shapes directly on the baking sheet.
Bake for 10 minutes.
The cookies should be just golden and soft.
