The iris is a typical Sicilian dessert invented in 1901 by the Knight Antonio Lo Verso in honor of Iris opera by Pietro Mascagni. The success of the dessert was such that he decided to change the name of his cafe in Iris. The Iris is a sweet yeast dough filled with ricotta. The dessert is very popular and appreciated in Sicily. Outside Sicily is a bit 'less well known at least compared to other more famous desserts such as cassata and cannoli. I propose that this is not the original recipe but a quick variation in my own way. They can also be filled with nutella or with the cream.

Ingredients
- 4 bread rolls round
- 250 grams of cottage cheese (ricotta cheese)
- 50 grams of sugar
- 25 grams of dark chocolate, chopped
- Half vanilla bean
- 1 egg
- 2 tablespoons of milk
- breadcrumbs

- Fry oil
Preparation
Prepare the filling: Mix the ricotta with 50 grams of sugar, chocolate and the vanilla seeds.
Take the sandwiches and make a hole on one side, remove some crumb (set aside), fill with cottage cheese and close the hole with the crumb kept aside.
Carefully dip each Iris ball in the the milk, then into the beaten egg and finally in bread crumbs.
Fry the Iris in hot oil, when they are golden, drain on absorbent paper and pass them in sugar. Serve.
