TIRAMISU WITH MINT

For traditionalists tiramisu is just coffee. Now there is also strawberry or cherry. In summer the temperatures go up, and the strawberries are not always found. For maximum freshness sensation, what's better than a tiramisu with mint? So if you don't want to prepare the usual tiramisu and if you want to remain on a simple fresh recipe, I think that this recipe is a nice idea.

Ingredients

- 200 grams of biscuits (Savoiardi also called Ladyfingers or Sponge fingers)
- 250 grams of mascarpone
- 2 fresh eggs
- 80 grams of sugar
- A cup of mint syrup
- 50 grams of milk chocolate or dark chocolate
- 700 ml of water
- 100 grams of sugar
- A bunch of mint (about 10 branches)
- 2 tablespoons of mint liqueur

Preparation

Prepare the syrup with mint: in a pot put water, sugar and mint sprig, bring to a boil and let it reduce by half, let it cool, remove the sprig of mint and add the mint liqueur. In a container mount to cream the yolks with the sugar, add the mascarpone and mix well. Beat the egg whites until stiff and add them to the mascarpone mixture, stirring gently. Place a layer of ladyfingers soaked (no exaggeration) in peppermint, pour a bit of mint syrup and spread a portion of cream, sprinkle with chocolate chips, cover with another layer of ladyfingers soaked; pour a bit of mint syrup and cover with the remaining cream. Decorated with chocolate chips and a few mint leaves. Keep refrigerated until ready to serve.
