Wash the vegetables and cut them into strips. Peel the potatoes and cut into chunks, carrot, celery and leek slices, onion into thin slices.
Put everything in a pot except the beans. Pour the water, add the salt and oil and cook with the lid on for 15 minutes.
Add the beans and pepper and cook for another 10 minuti. Toast the slices of bread, place 2 slices on each plate and pour the soup, put a drizzle of olive oil and serve.
