VERMICELLI WITH BROCCOLI (PASTA ARRIMINATA)

Ingredients

- 350 grams of broccoli Sicilian or Roman
- 320 grams of pasta like vermicelli
- 1 onion
- 1 fillet of anchovies
- 1 teaspoon of capers in salt
- 6 tablespoons olive oil
- 20 grams of pine nuts
- 20 grams of Gaeta olives
- 1 tablespoon raisins
- salt
- pepper

Preparation

Wash and boil the broccoli in salted water. Put aside the broccoli with two tablespoons of cooking water.
In a large skillet sauté the chopped onion in the oil, fillet of anchovies and capers washed and chopped. Add the broccoli with water and cook over moderate heat with the lid on for 10 minutes. Add the olives, pine nuts and raisins; season with salt and pepper. Let it cook for another 2 minutes. The dressing should not be too dry.
Boil the pasta in salted water, drain when al dente and pour in the sauce, cook for a few seconds and serve with a drizzle of olive oil.
