Prepare the dough for crêpes. In a bowl, knead the egg and flour, dilute with milk and beer, add a pinch of salt, butter. Knead until you get a batter with no lumps, then let it sit for about 2 hours.
Prepare the filling. Chop the leek with the garlic and a few leaves of marjoram, fry in oil, add the grated zucchini, salt and cook covered for 20 minutes. Remove the lid and let it dry.
Blend all the ingredients adding the cream, Parmesan cheese, eggs and a pinch of freshly ground pepper.
Begin to prepare the dumplings: butter a pan of 18 cm in diameter, pour a ladle of batter and cook the pancakes. Transfer the crepe on a square of parchment paper. Prepared in the same way other crèpes. Take the crepes with parchment paper and form the dumplings closing them with string and leaving them open for a little fill. Spread the zucchini mixture into dumplings and add 2 peeled shrimp in each bundle. Place them in a baking dish and bake at 180 degrees for 15 minutes.
