Ingredients

FOR CREPES:
- 4 eggs
- 250 grams of flour
- 1/2 liter of milk
- 1 pinch of salt
- pepper
- Butter.
FOR THE FILLING:
- 400 grams of minced beef
- 300 gr of peeled tomatoes into small pieces
- 1 carrot
- 1 onion
- 1 stalk of celery
- 5 tablespoons of oil
- 1 glass of red wine
- 1 bay leaf
- Salt, pepper, nutmeg
- 150 grams of cooked ham
- 20 grams of pine nuts (optional)
- 250 grams of mozzarella
- 20 grams of grated Parmesan cheese
- 500 grams of simple tomato sauce and basil
- Parmesan

Preparation

Prepare the crepes: In a bowl mix the eggs, then add the sifted flour, salt and a pinch of pepper, then a little milk at a time. Knead until you get a creamy liquid, smooth and sleek.
Pre-heat a pan of 18 cm in diameter with butter, pour a ladle of batter and cook the pancake.
Prepared in the same way the other. Set aside the crepes and prepare the sauce.
Chop the onion, carrot and celery and fry in oil with bay leaf. Add the ground beef and brown, moisten with the wine and let it evaporate. Add the tomatoes, salt, pepper and a pinch of ground nutmeg. Cover and simmer for 40-50 minutes on low heat.

Place the crepes on the work surface and spread in the sauce, ham and mozzarella cheese, roll forming cannelloni. Put a few tablespoons of sauce into a roasting pan, arrange the cannelloni in the pan and cover with the sauce and Parmesan cheese. Bake at 180 ° for 20-25 minutes
