Prepare the crepes : In a bowl mix the eggs , then add the sifted flour , salt and a pinch of pepper, then a little milk at a time . Knead until you get a creamy liquid , smooth and sleek .
Pre-heat a pan of 18 cm in diameter with butter , pour a ladle of batter and cook the pancake .
Prepared in the same way the other . Set aside the crepes and prepare the sauce .
Cleaned and filleted monkfish and redfish, and then cut into chunks.
Shell the shrimp and scampi , squid cut into strips .
In a pan fry the oil with the chopped onion , chopped parsley leaving aside a little , bay leaves and chopped garlic after a few minutes, add the squid and cook for 5 minutes with the lid.
At this point add the fish, redfish, shrimp scampi and cook for ; pour the wine and when it will evaporate pour the tomatoes cut into small pieces , add salt , put the chili and pepper. Let cook for 20 minutes over a low flame and cover . When the sauce is ready add the remaining parsley and a drizzle of olive oil.
Stuff the pancakes : pour about one half of the crepe 2 tablespoons of sauce fold it ,
put it back again sauce on one half and fold .
Place in a buttered baking dish and continue with the same procedure to the other stuff .
At this point, prepare the sauce .
Melt the butter in a pan , add the flour, a little at a time milk , salt and nutmeg.
Cook over low heat for about ten minutes. Pour the sauce on the fans .
Bake at 180 degrees for 20 minutes.
