Ingredients

cream:
- 1 egg yolk
- 2 tablespoons of sugar
- 2 tablespoons of flour
- 200 ml of raisins
- 180 ml ​​cream
- 1 pomegranate
Caramelized almonds:
- 100 grams of almonds
- 1 teaspoon of honey
- 60 grams of sugar

Preparation

Work the egg yolks with the sugar until the mixture is clear, add the flour and the raisins a little at a time, mix well until the mixture is smooth and without lumps.
Put the mixture on low heat and allow to thicken.
remove the cream from the heat and and let cool.
Caramelized almonds: In a bowl put the almonds, sugar and honey; put everything on the fire to medium heat and caramelized.
Pour the almonds on baking paper roll it out and let cool.
Whip the cream and add it to cream, add the pomegranate seeds already shelled almonds and chopped caramelized putting aside some pomegranate seeds and caramelized almonds for decoration.
Spread the cream into cups and decorated with pomegranate and almonds aside.
Put the cream in the refrigerator.
