In a bowl, pour the flour, formed a fountain and add sugar, eggs, pinch of salt, grated rind of lemon, and the yeast dissolved in warm cream. Mix all the ingredients, you get a smooth and soft. Cover with a damp cloth and let rise for an hour.
Prepare the cream: In a saucepan worked the yolk with the sugar, add the sifted flour. Pour the milk a little at a time, stirring constantly, add the lemon zest.
Put the mixture on the stove over medium heat and let thicken. Remove the lemon zest and let cool cream.
Take the dough and roll it out to a thickness of 1 cm. Obtained discs from the dough, put a teaspoon of cream on half of the discs and cover with the other disks. Cover and let rise for one hour. Fry in hot oil, pass the donuts in sugar and serve warm. They are good the next day.
