SALT ROASTED CHIKEN

Ingredients

- 1 chicken of about 1 kg
- 800 grams of coarse salt
- 2 cloves of garlic
- 1 sprig of rosemary
- 1 sprig of tarragon (optional)
- 1 sprig of thyme
- Grated rind of one lemon
- Juice of 2 lemon

Preparation

Clean and wash the chicken, open it, remove all the internal organs and cut it in half. The breasts should not be separated as they tend to dry out. Protect the two sides of the chicken with a cloth or wax paper and flatten with a meat mallet helping yourself carefully. Mince the garlic and herbs. Add salt to the mixture prepared and lemon zest, mix the salt and place in a baking dish, forming the basis for the chicken. Place the chicken on the salt, salt lightly, brush with lemon juice and bake at 170 degrees for about 50 minutes, turning two or three times. Every time you turn brush it well with the lemon juice.
Serve the meat with a salad.
