CHICKEN CURRY

The chicken curry is a typical Indian dish, easy to prepare and very tasty. The curry in our kitchen means a mixture of spices pounded in a mortar of Indian origin (known by the name of MASALA) and was imported into Europe by the British and owes its name (curry) to the word cari (sauce for the Tamil people). The curry is considered an excellent anti-inflammatory and antioxidant.

Ingredients

- 1 whole chicken, about 1.2 kg
- 1 onion
- 1 shallot
- 1 apple
- 125 grams of white yogurt
- Extra virgin olive oil
- 1 tablespoon curry
- 1 teaspoon chopped cilantro (optional)
- 2 tablespoons of vegetable or chicken broth
- salt

Preparation

Cut the chicken into pieces, wash and dry. In a pan heat 2 tablespoons of oil, add the chicken and brown until all the pieces are golden brown (about 10 minutes). Remove the chicken and put it in a plate and keep it warm . In the same pan saute in 3 tablespoons of olive oil and the onion finely chopped shallots. Add the diced apple and a pinch of salt and cook 5 minutes. Add the chicken broth, salt lightly, stir, cover and continue cooking on low heat for about 20 minutes; add the curry and coriander, stir well to mix well the curry. Continue cooking for about 10 minutes. Add the yogurt, mix thoroughly and cook for 5 minutes. Serve immediately with the sauteed vegetables or with rice pilaf or couscous for a main dish.
